Ingredients:
- 1 large dorada or similar fish (approximately 1-1.5 kg), cleaned and gutted
- 2 lemons, one sliced and one for juice
- 4-5 cloves of garlic, thinly sliced
- 2-3 medium tomatoes, sliced
- A bunch of fresh herbs (oregano, rosemary, thyme)
- Extra virgin olive oil
- Salt and ground black pepper, to taste

- Preheat the oven to 180°C (356°F).
- Rinse the fish with cold water and pat it dry. Season the inside and outside with salt and pepper.
- In the cavity of the fish, add lemon slices, garlic, and aromatic herbs. Sprinkle the rest of the garlic and lemon over the outside of the fish.
- In a baking tray, arrange a bed of tomato slices and place the fish on top. Drizzle the fish with olive oil and lemon juice.
- Bake in the preheated oven for about 30-40 minutes, or until the fish flesh becomes opaque and flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes before serving.Serve
